An exceptionally rich sake with complex umami flavours. A higher Koji-rice ratio (25%) is used in the production of Mongaifushutsu compared with the Japanese sake industry standard (18%), giving this pure-rice ginjo stronger aromatics and flavours from the rice. Winner of the International Wine Challenge's (IWC) Recommendation Award in 2020.
