A traditional starter culture originally used in Japanese sake brewing. When applied to sweet potato (imo) shochu, it works magic—toning down the typically heavy, earthy aromas of traditional black or white koji to create an incredibly smooth, approachable spirit.
From the very first stages of fermentation, the yellow koji coaxes out a remarkably vibrant aroma. The result is a shochu defined by a bright, refreshing fragrance reminiscent of ripe bananas, followed by a gentle, velvety sweetness that lingers beautifully on the finish.
