KUBOTA JUNMAI DAIGINJO is brewed in pursuit of "Magnificence of New Taste." A hint of pear and melon with an elegant aroma, an excellent harmony and acidic taste give a pleasant mouth-feel. Dassai "23 Ni-wari San-bu" Junmai Daiginjo is the sake that defines Dassai. It is made with rice that has been milled so that only 23% of the original size of the grains remains, this is the highest degree of milling of any sake in the world. Going to this extreme allows us to create a sake like no other, a sake that is the pinnacle of refined elegance, subtlety, and delicate flavours and aromas.

It is a small boutique sake brewery led by Shoichiro Morishima(6th generation).
Adopting the latest equipment, traditional methods and honed sensitivity, Morishima brewery merges the old and new in crafting its sake.
A sake to enjoy during meals, it is made from Omachi sake rice with a polishing rate of 50%.
The flavor is well refined and has received numerous awards in Japan as well as internationally.

Containing fine rice sediments that give it a pleasant milky aspect, its lactic nose (yogurt) associates white (grape, pear) and exotic fruits with a touch of fennel (anise / herbal). The bubble forms a delicate yet slightly fiery foam, which quickly gives way to a powerful lactic attack, dominated by chestnut notes from the koji. On the palate, this sake develops notes of white peach, William pear and sour candy. The rice residues give it a creamy texture reminiscent of almond milk and a slightly sweetened finish. This rich, sparkling and generous sake can make for a creative aperitif or accompany desserts with subtle sweetness.

Large-grain Yamada-Nishiki, grown in Yokawa Hyogo's “special A” Grand Cru terroir, is polished down to 39% of it's original size, and brewed without additives or accelerants. Brilliant in taste with an expansive fruity palette of elegant sweetness with lively acidity, it finishes refreshingly crisp.

The drink is smooth and has virtually no tail, leaving the patron wondering if he or she swallowed a sip. The Kubota Manjyu has a rather interesting aroma of tuberose and honeysuckle, and your first sip lives up to your expectations. The sake is light, clean and truly tasteful. The flavors have a touch of apples and pear and make the drink rather divine. The drink is best enjoyed with sushi, sashimi and other seafood dishes

The sake rice used is "Yuki Megami" for Daiginjo, developed in Yamagata Prefecture, and is luxuriously polished to 35%. It is a sweet sake with a glamorous and classy ginjo aroma, and a gentle flavor that allows you to feel the savory taste of rice in a clear Shimizu-like flavor.

Alt.3 is a blend of unpasteurized sakes brewed from Yamada Nishiki rice, from Hyogo “special A” Grand Cru terroir, a third offering from a brewery representing the finest in sake for some 350 years. Bright and present, it blossoms with sweetness, bitterness, freshness, and roundness forming a harmonious body.
Its rich complex taste might be a perfect match to the savory flavors of white fish butter meuniere, or other light yet flavorful fresh ingredients.

The sake uses Gohyakumangoku sake rice which is milled 50%.  The sake has a spicy and fruity aroma. The first sip of the Kubota Hekiju reveals flavors of nutmeg, pear, grape and sugarcane. The drink is sweet and well balanced. It is clear and distinct in its flavors and exactly what you want from a traditional sake. The Kubota Hekiju has an alcohol content of 15%. The sake pairs well with light flavored seafood foods.

The original sake of this product won the Gold Award for Japan's Best Sake for Drinking in a Wine Glass in 2021

This is a famous golden-colored sake that is made by blending unfiltered Junmai Daiginjo unpasteurized sake that has been ice-aged at -10℃ for a year, then heating it just before shipping to seal in the delicious flavor. Because it is unfiltered, it has a wonderful pale golden color, a clear aroma, and a refreshing, powerful taste.
