‘Uonuma’ is an area of Niigata Prefecture famed for its natural beauty. The kura-bito have a long history of affection for the Uonuma area due to its production of excellent rice crops, and this is shown in Uonuma sake.
This sake has a mild palette and is easy to drink, making it a great accompaniment to a variety of dishes.

Too much "banana" for my taste

Modern sake seems to be leaning more and more towards a "banana" fad. This one has the banana in the background, but still too much for my palate.
If you are looking for a traditional dry "rice" taste, then I'd say this sake goes 70% to 80% there, but that resedue of 20% or 30% of bananarama makes me turn away alas...

In 1855, Minatoya Tosuke founded the brewery at Echigo Yuzawa in Niigata prefecture. Echigo Yuzawa is famous for heavy snowfall and hot springs. When the snow melts, it becomes a waterfall, and high quality clean water gushes from the well in the brewery facility throughout the year.

Japanese sake is 80% water, and the spring water plays an essential role in brewing. Shirataki sake has complex aromas, and is delicate, smooth and soft on the palate.

Their wish is to share Echigo-Yuzawa's tranquility with all people and the lives they lead. Through production of fine premium sake, they seek to reflect the voice of our community in humble efforts to nurture and spread knowledge of the sake culture.
