Junmai Daiginjo from Omachi, a sake rice specialty of Okayama. It has a gentle aroma and a rich taste.
The sake rice produced in Okayama Prefecture is called "Omachi", which is known as the phantom sake rice, and is polished to 50%, and brewed with great care by the Bitchu brewer. Furthermore, this Junmai Daiginjo sake is aged at low temperature for a long period of time in the brewery, bringing out the full flavor and soft aroma unique to Omachi. Recipients include the 2012 Hiroshima Regional Taxation Bureau Sake Appraisal Award for Excellence in the ``Sake with Taste as Its Main Characteristic'' category, and the Omachi Summit Award for Excellence in the Ginjo Sake Category.
