40% polished 'Hitogokochi' Rice, designed and brewed with the pursuit of a beautiful balance, faint, refreshing acidity in the background, a bitter finish, and vivid sweetness.

Dassai Beyond was created over the course of a decade, with the ambition of surpassing the Dassai 23--considered by critics as a 'perfect' sake. The production of this extraordinary sake demanded going beyond normal flavour profiles to coax levels of depth, complexity and smoothness from rice that had never been tasted before in a sake.

This Sake Uses 100% "Kura no Hana" rice suitable for sake brewing from Kesennuma. Junmai Daiginjo brewed slowly at a low temperature in the bitter cold. A gorgeous fruity scent. It has a mellow texture, a well-balanced flavor, and a gentle sweetness. The aftertaste is sharp and crisp.

"Hyakumoku FUTURE Junmai Daiginjo" is a large grain harvested from the "Grand Cru" (special grade field), which has been linked for more than 100 years in the Yoshikawa Special A area in Hyogo's unique terroir. "Yamada Nishiki" rice is polished to 35%. This junmai daiginjo sake has a smooth texture and a sweet cooling sensation that feels like the moment the juice of a freshly ripe white peach overflows.It is characterized by its light, rich flavour and rich flavour.

「純米大吟醸 四方四里」は、当店の信条でもある四方四里、つまり原料米、仕込水、作り手の技まで、喜多方の風土から生まれたこだわりのお酒です。地元喜多方産の酒造好適米「山田錦」100％を使用しており、フルーティな香りと、瑞々しくふくらみのある味わいが特徴で、雑味がとても少なく淡麗中辛で喉にすーっと流れていき、後に少し甘味がでてくるような上品で洗練された逸品です。
