A summer limited edition sake. Yamada Nishiki rice is polished to 50% in-house and brewed with soft water that has a delicate sweetness. The sake is stored raw in a thermal tank and pasteurised only once when bottling. It has a fresh aroma and flavour, and is characterised by a soft mouthfeel and a refreshing, sharp taste.

This sake is made by all local ingredients, the rice is harvested in this field and clean soft water from snowing mountains.

This Junmai Daiginjo sake is named after Matsumoto Takaki, the seventh generation master brewer (Toji) at Shirataki Sake Brewery.
This sake is made from sake-brewing rice that has been polished to 35%.
It has a gentle, elegant aroma that spreads throughout your mouth the moment you put it in your mouth.
It has a smooth texture and a deep, viscous flavor.
This is a sake that will change your entire image of what you think of as a drink called "sake."

NIGORI, coarse-filtered cloudy sake with velvety, elegant texture. Along with the smoothness, brings perfect fruitiness and subtle sweetness as well as superb Ginjo aroma. Enjoy it chilled, or arrange it with your favorite fruits. Recommend to pair with spicy meat or grilled dishes with lots of umami. Kubota Junmai Ginjo Nigori achieved a smooth and easy-to-drink by creating a fine- grained sediments offering delightful aroma and perfect creaminess.

Made using the finest Shimeharitsuru techniques, including carefully polishing high-quality Yamadanishiki rice produced in Hyogo Prefecture in-house, washing and soaking the rice for seconds, temperature control, long-term low-temperature fermentation in small batches, and low-temperature aging after bottling, this is a Daiginjo sake with a clean fragrance and smooth, crisp flavor.
The sake is so flavorful that it makes you want to share cups with everyone, so we chose the name "San," which means more Sake cup.
