Based on a gentle scent reminiscent of Iwashimizu, minerals, and olives, it has a refreshing herbal scent of lemon and herbs. The characteristic of this sake is that it has a relatively low alcohol content of 13%, making the most of the complex umami and sourness of kimoto making so that you can enjoy sake relatively comfortably for a long time. This is also due to the fact that the yago larva molts about 13 times in the water in the rice paddy during the summer and emerges as a dragonfly. The taste is smooth and light, with a good balance of smooth sweetness and bright acidity.
It's also a good idea to chill it outdoors in the early summer afternoon and enjoy it slowly in a wine glass (like enjoying rosé wine).
