Dassai Beyond was created over the course of a decade, with the ambition of surpassing the Dassai 23--considered by critics as a 'perfect' sake. The production of this extraordinary sake demanded going beyond normal flavour profiles to coax levels of depth, complexity and smoothness from rice that had never been tasted before in a sake.

There are only four breweries that regularly supply sake for the Imperial household. Nihonsakari is one brewery to be so honored for over 100 years. This special sake called Souhana was permitted to be sold to the public for the first time in 1970.

This most superior sake has been used ever since by the Imperial family for important events such as the enthronement of Emperor Taisho and Showa; almost all weddings of the Imperial family; official welcome parties for state guests; and in 2019 the enthronement of the new Emperor of Japan.

A super premium, naturally fermented junmai daiginjo made from 'Yamada Nishiki' rice and produced in Hyogo prefecture's 'Special A' Grand Cru terroir in the town of Yokawa. Made from Fukuoka's "Yamada Nishiki" rice, which is polished to a rate of 35%. Fermentation takes
place in frigid conditions to maintain purity in flavour and the process is closely monitored for perfection.
Daiginjo Gokuho received the highest award of 583 brands in the IWC 2013 sake category, taking first
place.
