Sake

The aroma is orthodox, with an excellent balance of the rice's flavor, acidity, and sharpness. As the label suggests, it's not flashy, but it's a deep, mellow sake that can be paired with any dish. It can be enjoyed at any temperature, from cold to hot.
The jet-black label is inspired by Symboli Kris S, the famous horse bred by Symboli Ranch, which gave birth to the "Seven Crown Horse" title.

"Sake Hitosuji Jidai Okure Junmai Ginjo Yamahai" is a Junmai Ginjo made using the revival of the legendary sake rice "Omachi," once known as the "Emperor of Sake Rice," polished to 60%, and brewed using the Yamahai method. Omachi is said to be the best sake rice, but production has drastically decreased due to the difficulty of cultivation, so our brewery, located in a famous production area, has revived it. This product uses Omachi rice, and is brewed over more than twice the usual time to allow natural lactic acid bacteria and yeast to grow. It has a rich, deep flavor that is unique to the Yamahai method, and a unique taste with an exquisite balance of acidity and umami.

Established in 1869, the brewery is uniquely located extremely close to the Pacific Ocean. It is a small boutique sake brewery led by Shoichiro Morishima(6th generation).

名水の里・白州にて、南アルプス甲斐駒ヶ岳の伏流水で醸した純米大吟醸です。甲斐駒ケ岳は地域のシンボルとして「甲斐駒」と呼び親しまれてきました。その麓で酒造りができる幸せと感謝を込めた一本。ワイングラスで繊細かつ優美な味わいと香りをお楽しみ下さい。

This Junmai Ginjo sake has a gorgeous ginjo aroma and a well-balanced taste of Yamada Nishiki rice. It goes well with light dishes such as sashimi, and is recommended for women and those new to sake.
The name comes from "Ichiban-Popponent," which means the horse with the most betting on a horse race. This sake was named with the hope that it would become the "most popular" sake, and is a staple of the Nanakanba series that has been loved by customers for many years.

「純米大吟醸 四方四里」は、当店の信条でもある四方四里、つまり原料米、仕込水、作り手の技まで、喜多方の風土から生まれたこだわりのお酒です。地元喜多方産の酒造好適米「山田錦」100％を使用しており、フルーティな香りと、瑞々しくふくらみのある味わいが特徴で、雑味がとても少なく淡麗中辛で喉にすーっと流れていき、後に少し甘味がでてくるような上品で洗練された逸品です。

This is Shimeharitsuru's "Jun", a pure rice ginjo sake that makes the most of the natural flavor of the rice extracts from the sake rice "Gohyakumangoku". It is a refreshing sake with a unique style that has transcended the passage of time.
