This Daiginjo sake, created by Miyao Shuzo, is made with high-quality Yamada Nishiki rice from Hyogo Prefecture that is carefully polished at their own rice milling factory. The rice is then washed and soaked in just seconds, followed by a koji-making process with precise temperature control. The sake is then fermented in small batches at a low temperature, and aged for an extended period. This results in a refreshing aroma and a smooth, sharp taste. A limited edition sake made from "purple black rice," a type of rice that has been handed down since ancient times. 

The rice is polished at a very low rate of 99%. The light red colour of this sake comes from the purple rice, and it contains polyphenols.

It has a low alcohol content of 12%, is light on the palate, has a refreshing acidity and a subtle umami flavour.

Hitachi Nishiki is a rice suitable for sake brewing in Ibaraki Prefecture, developed in the local prefecture.
The only Morishima brand sake labeled as “dry”.

This is an autumn product of "Suminoe" that has been pasteurised. It is a pure rice sake with a gorgeous aroma and a crisp, dry finish.
