The origins of this rare and extraordinary sake began with a simple, yet the most challenging ambition: to handcraft a sake that would surpass the excellence of DASSAI 23, widely praised by critics as a “perfect” sake. And so, driven by the passion of DASSAI's founder, Hiroshi Sakurai, he and his small group of the finest sake artisans began their quest to improve upon perfection at Dassai's tiny, countryside brewery in Yamaguchi prefecture.

The traditional Yamahai brewing method gives the sake a rich aroma and rice flavor, with a delicate acidity that lingers in the aftertaste, making it a taste you will never tire of.
We use spring water from within the brewery as the brewing water, and the main ingredients are "Akita Sake Komachi" and "Yamada Nishiki" rice, which we have contracted with the brewers and farmers, and we use all of our own cultured yeast. In an organic environment that values the balance of microorganisms, we practice our specialty of sake brewing, relying on the power of nature.

Brewed with Tottori prefecture's 'Goriki' sake rice polished down to 60%, this medium-bodied Junmai sake has a slightly spicy note. A deliciously dry sake with a crisp acidity. Can be enjoyed hot or cold.

A fresh type of pure rice Ginjo made with Daiginjo yeast, with a gorgeous aroma and moderate sweetness mixed with a little carbon dioxide.

Chilled or on the rocks are also recommended!

Product Description

Made from 100% specially contracted rice, this Tokubetsu Junmai sake originates from the high-quality "Reimei" rice cultivated with pure spring water from the Sakurada River at the foot of Mount Hakkoda. Refined through selective breeding, the Hanafubuki rice used in this sake creates a perfect balance of lightness and depth. Smooth and well-rounded, it enhances the flavours of various dishes, making it an ideal food-pairing sake.

Discover the perfect umami-retaining drink from Suminoe, the Tokubetsu Junmai Shu. Enjoy it chilled or warm with meals. Made by a small brewery near Shiogama Port in Miyagi Prefecture.

Made using the finest Shimeharitsuru techniques, including carefully polishing high-quality Yamadanishiki rice produced in Hyogo Prefecture in-house, washing and soaking the rice for seconds, temperature control, long-term low-temperature fermentation in small batches, and low-temperature aging after bottling, this is a Daiginjo sake with a clean fragrance and smooth, crisp flavor.
The sake is so flavorful that it makes you want to share cups with everyone, so we chose the name "San," which means more Sake cup.
